Cookin’ Outdoors

-1I like to cook, and I like to cook outdoors!

With a little thought and preparation it’s easy to make hearty outdoor dishes full of colour and flavour to satisfy the pickiest of eaters!
The following are some of my favourites

Bon appetite!

Paella (view video)

1 pkg Knorr Spanish Rice mix
1 3/4 cups chicken broth (or water)
1/2 cup thawed previously frozen peas and carrots
6 peeled large shrimp
the meat from 2 skinless chicken thighs
2 ounces (half a pack) sliced dried Chorizo
1/2 teaspoon smoked paprika
6 mussels

Drizzle with olive oil; sprinkle with salt and pepper. Cover and cook until rice mix absorbs the liquid and mussels open.

*If using raw chicken and shrimp, brown the chicken and sauté the shrimp first, before adding the rice mix and other ingredients.

Makes two ‘adult-sized’ servings.

Creole Shrimp and Rice

2 Tbsp vegetable oil
1/4 green bell pepper, diced
1/4 yellow onion, diced
30 raw shrimp
1 cup of stewed tomatoes, diced (with liquid)
1 cup instant rice
Emeril’s Creole Seasoning (to taste)
Louisiana Hot Sauce (to taste)

Emeril’s Creole Seasoning Mix
2-1/2 Tbsp Paprika
2 Tbsp Salt
2 Tbsp Garlic Powder
1 Tbsp Black Pepper
1 Tbsp Onion Powder
1 Tbsp Cayenne Pepper
1 Tbsp Oregano
1 Tbsp Thyme

Chicken and Dumplings

2 Tbsp vegetable oil
1 cup raw chicken, cubed
1 Tbsp flour (from Dumpling Mix below)
1/2 cup celery, sliced
1/2 cup onion, diced
2-3 cups water
2 cups potato, diced
1/2 cup frozen peas and carrots
1/2 tsp poultry seasoning
1/2 tsp summer savory
1/4 tsp salt
1/8 tsp black pepper

Dumpling Mix
1/2 cup flour
2 tsp baking powder
1/4 tsp salt
1 tsp parsley
water (to form a thick batter)

Salmon with Rice and Green Beans

1 Salmon fillet 1
2/3 c. green beans 160 ml
1 c. water 250 ml
2/3 c. instant rice 160 ml

Add a dash of hot sauce, soya sauce, or lemon juice to taste.

1/2 cup Water
1/2 cup Milk
1/4 cup Quick Grits
1 tsp Butter
Cubed Cooked Ham
Shredded Cheese
Creole Seasoning
Cajun Chicken and Sausage Gumbo

Cajun seasonings + chicken broth + water
cooked chicken + sliced sausage
sliced okra + sliced celery
diced onion + diced green bell pepper

Serve in bowls with a scoop of white rice

red kidney beans + diced red bell pepper
diced tomato + diced onion + diced celery
minced garlic

Serve over a scoop of white rice.

Serve topped with shredded Monterey Jack cheese
